1 teaspoon olive oil

1 large onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

2 stalks celery, diced

2 cups chicken broth

1 (14.5 oz) can diced tomatoes

1 (15 oz) can corn, drained

2 cups cooked frozen white chicken breasts, shredded (or 2 cups cooked rotisserie chicken, chopped)

1 teaspoon seasoned salt

1/2 teaspoon black pepper

1/4 cup chopped fresh cilantro


In a large saucepan over medium heat, heat the oil. Add the onion, garlic, bell pepper, and celery and sauté until the vegetables are tender, about 5 minutes. Add the chicken broth, diced tomatoes, corn, white chicken breasts (or rotisserie chicken), seasoned salt and black pepper and bring to a simmer. Cover the pan and simmer until heated through, about 10 minutes.

Transfer the soup to a blender and blend until smooth. Return the soup to the saucepan and stirring constantly with a wire whisk until hot. Stir in cilantro before serving.
